The new Carve Market will bring the company’s distinctive combination of premium meats, traditional butchery, prepared foods, local products, and a welcoming community atmosphere to Warsaw. The location is expected to open in 2027.

“We are excited to bring Carve Market to Warsaw and become part of the continued momentum happening in downtown,” said Jeff Kaiser, President of Carve Market. “Millworks is an exciting project that is helping bring new life, new residents, and new opportunities to the heart of the community. We believe Carve Market fits naturally into that vision.”

The Warsaw Carve location will be part of Millworks, a significant downtown redevelopment led by AP Development. Located at the former Owens Grocery site, the approximately $21 million Millworks project also includes 86 market rate apartments and is designed to contribute to the continued revitalization of downtown Warsaw. For Carve Market, the Warsaw location represents another step in the company’s growth across Indiana. Founded in Auburn, Carve Market was created to bring craftsmanship, quality meats, thoughtful sourcing, and the traditional butcher-shop experience into a modern, approachable setting. The company currently operates locations in Auburn and Fort Wayne, with Warsaw opening in 2027. (Carve Market)

“Carve Market is about more than buying a great steak,” said Jeff Kaiser. “It’s about knowing where your food comes from, connecting with the people who prepare it, discovering something new, and having a place where people want to gather. We’re looking forward to making that experience part of the Warsaw community.”

The new Warsaw market is expected to offer many of the elements that have become central to the Carve Market experience, including expertly sourced and hand-cut meats, fresh prepared foods, market and deli selections, local products, and products and expertise for outdoor cooking and live-fire enthusiasts.

The company also sees an opportunity to connect with Warsaw’s growing downtown residential and business community.

“We’re thrilled to welcome Carve Market to The Millworks,” said Jon Anderson, CEO of AP

Development. “Having a destination-oriented business like Carve Market as part of the

project adds another dimension to what we envisioned for this development and for

downtown Warsaw. We believe it will be a great fit for the residents of Millworks as well as

the broader Warsaw community.”

Additional information regarding the Warsaw location, including the anticipated opening

date, hours, employment opportunities, and other details, will be announced as the project

progresses.
